Everything you love about a campfire s'more, baked into one warm, gooey skillet cookie. A buttery chocolate chip cookie is layered with graham crackers, loaded with chocolate, and finished with toasted mini marshmallows for a dessert that's just as fun to make as it is to share.

    • 1 stick (½ cup) butter, melted

    • ½ cup granulated sugar

    • ½ cup packed brown sugar

    • 1 teaspoon vanilla extract

    • 1 large egg

    • 1½ cups all-purpose flour

    • ½ teaspoon baking soda

    • ½ teaspoon salt

    • ½ cup semisweet chocolate chips

    • ½ cup mini marshmallows

    • ¼ cup chopped walnuts (optional)

    • 4 graham cracker sheets, broken into large pieces

    • ½ cup chopped milk chocolate or chocolate bar pieces

    • 1½ cups mini marshmallows

    • Crushed graham crackers, for garnish (optional)

    Directions

    1. Preheat your oven to 350°F.

    2. In a large bowl, whisk together the melted butter, granulated sugar, brown sugar, vanilla, and egg until smooth.

    3. In a separate bowl, combine the flour, baking soda, and salt. Stir the dry ingredients into the wet ingredients until just combined.

    4. Fold in the chocolate chips, marshmallows, and walnuts, if using.

    5. Lightly grease your Lancaster No. 8 Skillet. Spread the cookie dough evenly into the bottom of the skillet.

    6. Press the graham cracker pieces gently into the top of the dough, then scatter the chopped milk chocolate over everything.

    7. Bake for 15–18 minutes, or until the edges are lightly golden and the center is almost set.

    8. Remove the skillet from the oven and immediately top with the mini marshmallows.

    9. Return the skillet to the oven for 2–4 minutes, just until the marshmallows are puffed. For a classic campfire finish, use a kitchen torch to toast the marshmallows until they're golden brown.

    10. Sprinkle with crushed graham crackers, if desired, and let the cookie cool for about 10 minutes before serving.
