There's something special about taking a handful of simple ingredients and turning them into something that feels elegant. This Leek Tarte Tatin does exactly that. Sweet, caramelized leeks, flaky puff pastry, and a touch of honey come together in a recipe that's just as fitting for a casual lunch as it is for a dinner party.
Preheat your oven according to the puff pastry package directions.
Clean the leeks well and cut them into 2 inch pieces. Thaw the puff pastry until it is pliable.
Drizzle olive oil and honey into the bottom of a No. 10 skillet. Sprinkle with salt, black pepper, and fresh thyme.
Arrange the leek pieces snugly in the skillet so they cover the entire bottom in a single layer.
Place the sheet of puff pastry over the leeks and gently tuck the edges down around the inside of the skillet.
Brush the top of the pastry with a light egg wash.
Bake until the pastry is puffed, deeply golden brown, and crisp, about 30 to 35 minutes
Let the tart rest for 10 to 15 minutes after removing it from the oven. Carefully place a serving platter over the skillet and invert the tart onto the platter.
Finish with crumbled honey goat cheese, a sprinkle of fresh thyme, and an extra drizzle of honey and/or olive oil before serving.
