Nana's Chicken and Biscuits

Growing up, Nana used to come over every Tuesday evening to see my sister and me off the school bus. My parents would be home around dinner time, and she would have a big meal heading for the table as soon as mom and dad walked in the door. Chicken and biscuits were a staple in the Tuesday night rotation. This meal is the definition of comfort food for me, and I'm excited to share it with you!

Ingredients

1 onion, chopped
1 tbsp butter
1/2 cup water or chicken stock
4 cups chopped cooked chicken (grilled, broiled, canned, etc)
1 10 oz can cream of chicken soup
1 cup sour cream
1/2 cup milk
1 cup shredded cheddar cheese
1 tube Grands!™ biscuits 

Directions

1. Preheat oven to 350 degrees.
2. On medium heat, melt butter in your cast iron skillet, and saute onions until tender.
3. Pour skillet contents in a medium mixing bowl. On medium heat, deglaze by adding chicken stock/water and bringing to a simmer. This will release any flavors stuck to the bottom of the skillet. Add the liquid to the mixing bowl and stir in the cooked chicken, cream of chicken soup, sour cream, and milk. Mix well, then pour back into the skillet. Bake for 15 minutes.
4. Remove from the oven. Sprinkle most of the cheddar cheese over the dish. Arrange biscuits in a single layer over top. Sprinkle with remaining cheese.
5. Bake for about 20 minutes until the biscuits are golden brown and sauce is bubbly. Serve immediately.
