Nana's Chicken and Biscuits

This meal is the definition of comfort food! For our co-owner Mark, it was his Nana's favorite way to use up the left over chicken in the fridge. This meal is easy, quick, and a perfect cozy winter treat!
Ingredients

No. 8 Cast Iron Skillet or any 10.5” inch skillet

1 onion, chopped

1 Tbsp butter

1/2 C water or chicken stock

4 C left over chopped cooked chicken (grilled, broiled, canned, etc)

1 10oz can cream of chicken soup

1 C sour cream
-
1/2 C milk
-
1 C shredded cheddar cheese

1 tube Grands!™ biscuits

Preheat oven to 350 degrees.
On medium heat, melt butter in your cast iron skillet, and saute onions until tender.
Pour skillet contents in a medium mixing bowl. On medium heat, deglaze by adding chicken stock/water and bringing to a simmer. This will release any flavors stuck to the bottom of the skillet. Add the liquid to the mixing bowl and stir in the cooked chicken, cream of chicken soup, sour cream, and milk. Mix well, then pour back into the skillet. Bake for 15 minutes.
Remove from the oven. Sprinkle most of the cheddar cheese over the dish. Arrange Grand’s biscuits in a single layer over top. Sprinkle with remaining cheese.
Bake for about 20 minutes until the biscuits are golden brown and sauce is bubbly. Serve immediately.
