There may be no better way to welcome the chilly weather than this rustic cast iron pear galette. The flaky crust, warm spices, and sweet pears are the perfect greeting to the fall leaves and cozy sweaters! Thank you to Faith Privitera from Faith’s Cakes for creating this beautiful treat for us.
Combine flour, sugar, and salt in a bowl. Cut butter into flour mixture until it resembles coarse crumbs. Add water and lemon juice, stirring until a rough dough forms, cover in plastic wrap, and place in the refrigerator for an hour or overnight.
For Filling:
Mix mascarpone cheese, brown sugar, heavy cream, and cinnamon in a bowl and set aside.
In a separate bowl, add pears, brown sugar, flour, white sugar, vanilla extract, pumpkin pie spice, nutmeg, and cardamom. Combine until all the pears are evenly coated with the mixture.
After the pie crust has chilled, roll it out on a floured surface until it reaches about ¼ inch thickness consistently. Place the crust in the cast iron pan, with a two-inch overhang of crust.
Spread the mascarpone filling in the bottom of the crust, and spread evenly. Top the mascarpone mixture with the spiced pears in an overlapping pattern.
Mix egg yolk and 1 tbs of water until fully incorporated. Brush the exposed pastry crust with the egg wash. Bake at 375°F for 25 to 30 minutes until golden brown and filling has softened.
