You can elevate your classic grilled cheese to a gourmet grilled cheese in just a couple of minutes and a few simple ingredients! We believe that bacon makes everything better and this recipe is no exception. This sandwich pairs perfectly with a bowl of warm tomato soup in the winter and is an excellent way to use fresh basil and tomatoes from your garden in the Summer. This recipe is a favorite because it's simple, perfect for every season, and is absolutely delicious!
Ingredients

2 Slices of artisan sourdough bread

Shredded or sliced, aged cheddar cheese

Shredded or sliced Monterey Jack (or similar) cheese

6 Basil leaves

3 Slices of bacon, cooked

2 slices fresh tomato

2 Tbsp of mayonnaise (inside and outside)

1 Tbsp butter

Splash of Olive Oil (helps prevent butter from burning)
Directions
Cook 3 slices of bacon in skillet until crisp. Set bacon aside and remove bacon fat. Add the butter and olive oil to the warm skillet.
Spread mayonnaise generously on each side of the sliced bread. The mayonnaise on the outside will make the bread crispy as it cooks and the layer on the inside will add flavor.
Assemble the sandwich by layering the aged cheddar cheese, basil leaves, 3 slices of bacon, tomato slices, and Monterey jack cheese on the slices of bread.
Place sandwich in the preheated skillet and cook on each side for about 2 minutes or until golden brown. Cover with a lid while cooking to allow the cheese to melt evenly.
