You can elevate your classic grilled cheese to a gourmet grilled cheese in just a couple of minutes and a few simple ingredients! We believe that bacon makes everything better and this recipe is no exception. This sandwich pairs perfectly with a bowl of warm tomato soup in the winter and is an excellent way to use fresh basil and tomatoes from your garden in the Summer. This recipe is a favorite because it's simple, perfect for every season, and is absolutely delicious!
2 Slices of artisan sourdough bread
Shredded or sliced, aged cheddar cheese
Shredded or sliced Monterey Jack (or similar) cheese
6 Basil leaves
3 Slices of bacon, cooked
2 slices fresh tomato
2 Tbsp of mayonnaise (inside and outside)
1 Tbsp butter
Splash of Olive Oil (to prevent butter from burning)
Sliced red onions (Optional)
Cook 3 slices of bacon in skillet until crisp. Set bacon aside and remove bacon fat. Add the butter and olive oil to the warm skillet.
Spread mayonnaise generously on each side of the sliced bread. The mayonnaise on the outside will make the bread crispy as it cooks and the layer on the inside will add flavor.
Assemble the sandwich by layering the aged cheddar cheese, basil leaves, 3 slices of bacon, tomato slices, and Monterey jack cheese, and optionally the sliced red onion on the slices of bread.
Place sandwich in the preheated skillet and cook on each side for about 2 minutes or until golden brown. Cover with a lid while cooking to allow the cheese to melt evenly.
Enjoy!
Chocolate Peanut Butter Lava Cake
Deeply rich and fudgy with a warm molten center, this lava cake brings together classic chocolate decadence with a twist of nutty peanut butter. The cake hides a gooey peanut butter ganache surprise inside and is finished with a gently sweet peanut butter swirl baked into the top.
No Knead Dutch Oven Yeast Bread
We love how The Uncomplicated Chef keeps dessert elegant and simple.
Her Cherry Cornmeal Spoon Cake is exactly the kind of recipe we love, juicy cherries, a simple cornmeal batter, and a scoop of vanilla ice cream to finish it off. Perfect for a simple summer night treat.
